    Caramel-Glazed Plantains

    My favorite side dish or Cuban dessert, caramelized plantains can be paired with sweet or savory meals. If you serve it as a side with meat and rice, the sweetness of the caramelization brings a roundness of flavors to the experience. If you serve it as a dessert, try adding a generous scoop of vanilla ice cream on the side. Either way, the gooey, warm sweetness of the dish is a household and restaurant favorite across the island.  


    Ingredients
    3
    ripe bananas or plantains
    1/4
    stick
    butter
    *
    water (for pan)
    6
    tablespoons
    brown sugar
    2
    cinnamon sticks
    *
    ground cinnamon (to garnish)
    Directions
    Cut each banana into 4 pieces. Sauté in the butter, turning constantly. Let them brown on all sides. 
    Add water to cover the banana, filling the pan halfway up the sides. Add the brown sugar and the pieces of cinnamon, and let it boil. 
    Wait until the mixture thickens, like a caramel. The bananas should be completely cooked. Sprinkle the top with ground cinnamon.
