    Caprese Grilled Cheese with Jalapeño Cilantro Pesto

    ciabatta rolls

    unsalted butter, melted

    fresh cilantro, chopped

    jalapeno, minced
    1/3
    cup
    roasted almonds, chopped
    1/3
    cup
    queso duro, grated
    1
    garlic clove, chopped
    1
    teaspoon
    salt
    1/2
    teaspoon
    white pepper
    1/2
    cup
    Olive Oil
    2
    tablespoons
    Lime Juice

    ounces fresh mozzarella, sliced
    1
    medium tomato, sliced
    Directions
    Preheat oven to 400 F. Line baking sheet with aluminum and set aside.
    Slice the top crust off of each ciabatta roll and discard. Then, slice each roll into 2 slices (top and bottom). Brush butter on the outside of each ciabatta slice.
    Preheat a large pan on medium heat. Place ciabatta slices butter side down in pan and cook until a crisp and golden crust forms, then transfer slices on baking sheet and set aside.
    In a food processor combine cilantro, jalapeño, almonds, queso duro, garlic, salt, white pepper, olive oil and lime juice. Pulse and blend until a smooth pesto forms.
    Spread a tablespoon of pesto onto cut side of each slice of bread.
    Working with the bottom slices first, layer each with 2 ounces mozzarella, 2-3 slices of tomato, 2 more ounces of mozzarella and cover with top slice of ciabatta pesto side down.
    Transfer sandwiches to oven and bake for 15-20 minutes, until mozzarella melts and sandwiches are fragrant.
    Serve sandwiches with additional pesto.
