    Campbell's® Ropa Vieja (Cuban Style Shredded Flank Steak)

    The name “Ropa Vieja” translates as “old clothes,” but the flavor in this recipe is fresher and lighter than a regular old stew. Using the convenience of a slow cooker, slow roasted Ropa Vieja is a great make ahead dish, especially on those days when you are overloaded with household chores…or laundry!

    flank steak

    (10 3/4 ounces) Campbell's® Healthy Request® Condensed Tomato Soup plus one can of water
    Directions
    Place onions, bells pepper, and cilantro in the bottom of a 4-6 quart slow cooker. Place the uncooked flank steak on top of the vegetables.
    Then add the vinegar, garlic, cracked pepper, and Campbell's® Healthy Request® Condensed Tomato Soup, plus the can of water.
    Set the slow cooker to high, and allow to stew for five hours, until the meat is very tender. Stir only once or twice during the five hours.
    Remove the flank steak from the cooking liquid. Using two forks, shred the steak into threads, and then return to the cooking liquid. Serve hot over rice.
