    Boneless Short Ribs With Lime-Cumin Marinade

    Boneless short ribs are thinly cut across the bone. Look for them labeled as "flanken-style" at your local butcher shop or in the grocery store.

    Pounds
    Certified Angus Beef ® boneless chuck short ribs
    1
    teaspoon
    finely grated lime zest
    1/4
    Cup
    fresh lime juice
    1
    teaspoon
    ground cumin
    1/2
    teaspoon
    salt
    1/2
    Cup
    vegetable oil
    1/2
    Cup
    toasted coconut flakes
    Directions
    Combine lime juice, zest, cumin and salt in a small mixing bowl; whisk in oil. Evenly coat short ribs by placing in a zipper-locking plastic bag. Refrigerate overnight.
    Grill over medium heat for 15 minutes, searing evenly on all sides. For maximum tenderness place short ribs in a shallow pan; move to cooler part of grill and cook an additional hour until tender.
    Garnish with toasted coconut.
