    Blistered Poblano and Chicken Tacos

    Blistered Poblano and Chicken Tacos are a true savory treat with bacon, onion, poblano and garlic coming together with juicy chicken and topped with a homemade heirloom tomato salsa.


    Ingredients
    Blistered Poblano Chicken
    1/3
    cup
    thick cut bacon, finely diced
    1/2
    yellow onion, thinly sliced
    1
    poblano pepper, blistered, deseeded and finely diced
    1
    teaspoon
    garlic, minced
    1 1/2
    cups
    chicken, cooked and cubed

    salt and pepper to taste
    6
    flour tortillas, warmed
    Heirloom Tomato Salsa
    2/3
    cup
    heirloom cherry tomatoes, finely diced
    2
    tablespoons
    lemon juice

    tablespoons
    Olive Oil

    tablespoons
    cilantro leaves, chopped

    salt to taste
    Directions
    In a sauté pan on medium heat cook bacon until crisp and fat is rendered. Remove bacon and set aside.
    Add onion, poblano and garlic. Cook until onion is translucent, then add chicken and bacon and continue to stir until chicken is warmed through. Season with salt and pepper to taste.
    In a small bowl combine all ingredients for Heirloom Tomato Salsa. Set aside.
    To serve, stuff tortillas with Poblano Chicken and top with Heirloom Salsa. Garnish with extra chopped cilantro.
