Black Rice, Banana, and Coconut Breakfast Bowl

This Black Rice, Banana, and Coconut Breakfast Bowl is as delicious as it is nutritious. Black rice has high levels of fiber, meaning it is absorbed at a slower rate into the body, keeping you feeling fuller for longer. Ingredients

black glutinous rice

coconut water

banana, sliced

pomegranate seeds

cup
unsweetened fresh almond milk

tablespoons
coconut milk

a few mint leaves
Directions
Soak the rice overnight.
When ready to cook, rinse thoroughly, transfer to a small saucepan with the cinnamon, ginger, coconut water, and ½ cup cold water. Bring to a boil, cover with a tight-fitting lid or foil, and simmer for 30 to 35 minutes.
Prepare the banana and pomegranate seeds.
When the rice is cooked, add the almond milk and bring back to a boil. Simmer for a couple of minutes, then remove the ginger.
Divide between two bowls and top with fruit and coconut milk. Garnish with mint leaves and serve.
