    Bean, Cheese & Chorizo Molletes

    Refried beans, bolillos and cheese are a staple in most Mexican families and molletes are one of the simplest, inexpensive and most delicious breakfast you can have using these ingredients. Kids love them, because you don’t need silverware, and moms love when their kids are happy.  If you are a vegetarian, the chorizo can be substituted with roasted mushrooms, pico de gallo or soy chorizo.

     

     


    Ingredients
    2
    bolillos (or French bread) cut in half lengthwise
    2
    tablespoons
    butter
    1 1/2
    cups
    refried beans
    1
    cup
    shredded melting cheese
    1/2
    cup
    cooked chorizo
    Directions
    Preheat oven to 350 degrees.
    Spread 1/2 tablespoon of butter on the sliced side of each bread half. Place on a baking sheet butter side down and toast them for 8 minutes or until bread is golden and crispy.
    Remove from oven.
    Spread refried beans over each bread half, dividing them evenly.
    Sprinkle cheese and chorizo over beans and return to oven.  Bake for 8 minutes more or until cheese has melted.
    Enjoy with salsa or top them with pico de gallo.
