BBQ Pernil Sandwiches

What do you do with all of your pork leftovers? For starters, you could whip up a little batch of Spicy Agave BBQ Sauce, toss it with your shredded pork and pile it high on some buns. BBQ Pernil Sandwiches are a cinch to make and fit to feed either a few or a crowd.


Ingredients
Agave BBQ Sauce

teaspoon

cooked pernil, shredded

water

Directions
For BBQ Sauce: In a small bowl combine agave, lime zest, ketchup, apple cider vinegar, ancho, turmeric, chili powder and salt. Mix until a thick sauce forms.
For Sandwiches: In a sauté pan on medium-high heat warm pernil. Add water and toss, allowing the steam to re-hydrate the pernil. Add BBQ sauce to pernil and toss again until each strand is evenly coated.
Pile burger buns high with 1 cup of pernil each. Serve hot.
