    Basic Mangú

    This Basic Mangú is perfect as a base for stews and sautées and is ready in 30 minutes! It's a classic Dominican dish, usually topped with a fried egg and eaten for breakfast. But it makes a great base for soups and stews as well. 


    Ingredients
    4
    green plantains, peeled
    1 1/2
    cups
    reserved cooking liquid
    1/4
    cup
    extra virgin olive oil
    3
    garlic cloves, peeled
    3
    tablespoons
    unsalted butter, softened
    *
    salt and pepper to taste
    Directions
    Place the peeled plantains in a large pot, fill with water to cover, and bring to a boil.
    Boil until fork-tender (about 20 minutes) and set aside two cups of cooking liquid.
    Sauté the garlic in olive oil until fragrant.
    Place the hot plantains in a food processor and combine with the garlic, olive oil, butter, and 1 cup of cooking liquid.
    Season to taste and add more cooking liquid if needed.
