    Basic Cauliflower Rice

    Ok, so it’s not rice but it is darn close and way healthier. This all-the-rage side is great with beans, just like its carb-laden predecessor.


    Ingredients
    5
    cups
    cauliflower florets
    2
    tablespoons
    extra virgin olive oil
    1/2
    large spanish onion, diced
    3
    cloves
    garlic, finely chopped
    1/4
    cup
    low-sodium chicken broth
    *
    Salt and Pepper
    Directions
    Place the florets in a food processor and pulse a few times until they become the size of rice. You can also grate the cauliflower. This should yield about 4 cups.
    In a large frying pan over medium heat, sauté the onions and garlic until soft. Add the chicken broth and riced cauliflower and cook for 2–4 minutes until tender.
    Season to taste and serve immediately.
