Basic Bitters Recipe

Cocktail blogger Sam Meyer of Cocktaiilians encourage testing, tinkering, and regular tasting to arrive at a bitters recipe that suits your own taste. The measurements here–and even some of the ingredients–are just basic guidelines. “Have fun!,” he says, “and use  ingredients you think will taste good together, and don't be afraid to experiment.”

grain alcohol

whole allspice berries

star anise

cracked cardamom pods

teaspoon
crushed mace blades

generous pinch of finely-sliced or grated fresh ginger
Directions
Place all of the ingredients in a clean jar and allow them to steep in the alcohol for 10-15 days. Shake the jar daily to mix the ingredients.
Begin tasting daily after the ingredients have infused for several days. You're looking for a “good strong flavor,” not one that is “musty or muddy.”
Once your bitters taste right to you, strain the solids out using cheesecloth. Filter the bitters again, using a sieve lined with cheesecloth.
Once filtered, taste the bitters again. Cut them with water if necessary, then bottle.
