    Banana Amaranth Pecan Pancakes

    amaranth
    1 1/2
    teaspoons
    baking soda

    cinnamon

    tablespoon
    sugar

    tablespoon
    coconut oil
    1
    cup
    coconut milk
    1
    teaspoon
    vanilla
    1
    small banana, sliced
    1/4
    cup
    pecans, toasted and chopped
    Directions
    Turn on large pan to medium-high heat.
    In a medium bowl mix flours, baking soda, cinnamon and sugar.
    In a separate bowl combine coconut oil, coconut milk and vanilla.
    Add wet ingredients to dry and fold until incorporated. Add bananas and pecans, then fold until incorporated.
    Pour batter into pan 1/4 cup at a time.
    Once bubbles form on surface of pancakes, 2-3 minutes, flip. Cook until golden brown on both sides.
