    Avocado Pesto Pasta

    This homemade pesto has a secret ingredient: avocado! It adds creaminess and bumps up the nutty flavor. Lemon, garlic, and basil amp up the flavor.

    linguine

    fresh basil leaves

    avocados

    cup
    walnuts, plus more for garnish

    Juice of 1 lemon

    cloves garlic, minced

    Olive Oil

    salt to taste

    pepper to taste
    Directions
    In a large pot of salted boiling water over high heat, cook pasta until al dente about 5-7 minutes depending on the thickness of the pasta.
    While the pasta is cooking make the avocado pesto. To a food processor add the basil, avocados, walnuts, lemon juice, garlic cloves, olive oil, salt, and pepper.
    Blend until smooth. Drain the pasta, reserving about 1/4 cup of pasta water.
    Add the pesto to the cooked pasta, stir to combine. Add in 2-3 tablespoons of reserved pasta water if the pesto is too thick.
    Garnish pesto pasta with walnuts and basil leaves.
