    Avocado Grilled Cheese Sandwich

    Thick slices of Texas toast are layered with lime drenched avocado slices and Queso Oaxaca for a simple grilled cheese with a kick.


    Ingredients

    medium ripe avocados, sliced
    1/2
    lime, juiced
    1/4
    teaspoon
    kosher salt
    1/4
    teaspoon
    ground black pepper
    4
    slices Texas toast or other thick sliced bread
    4
    slices
    Oaxaca or Quesadilla cheese
    2
    tablespoons
    unsalted butter
    Directions
    In a bowl toss the sliced avocado with lime juice, salt and pepper.
    To assemble the sandwiches, top 1 slice bread with one slice of cheese, avocado slices and a second slice of cheese. Top with a second slice of bread. Repeat this to make a second sandwich.
    Heat 1 tablespoon of butter in a nonstick skillet over medium–low heat.
    Add sandwich to pan. Cook until cheese melts and bread is golden in color, about 3 minutes each side. Cook the second sandwich in the remaining tablespoon of butter.
