    Avocado Garlic Hummus (Hummus de Ajo y Avocado)

    Hummus is a spread made from chickpeas or garbanzo beans. This version incorporates a Latin touch with the addition of avocado and a garnish of cilantro.


    Ingredients

    juice of half a lime

    salt and fresh ground pepper, to taste
    *
    chopped cilantro, black olives for garnish, paprika, for garnish
    Directions
    To prepare the garlic paste, place whole garlic and a touch of olive oil on a baking tray.
    Bake it at 320 degrees for approximately 1 hour.
    Remove tray from oven and let it cool.
    Squeeze 4 or 5 garlic cloves out of their skins and mash them with a fork.
    In a food processor, combine the chickpeas, avocado, garlic paste, tahini, lime juice, salt, pepper, and olive oil.
    Process the mixture until is smooth and homogeneous. Stir and adjust seasoning to taste.
    Transfer mixture to a serving spread bowl and garnish with the fresh chopped cilantro leaves, chopped black olives and olive oil.
