    Arroz con Gandules

    Gandules, or pigeon peas, make this rice dish stand out. Well, that and the fact pernil and arroz con gandules are what holiday dreams are made of. 


    Ingredients

    bacon
    1/2
    large onion, chopped
    1
    long italian green pepper, diced
    garlic cloves, minced
    1
    teaspoon
    adobo seasoning
    1/2
    inch piece
    one slice ham, diced
    1
    tablespoon
    tomato paste
    3
    cups
    chicken broth
    3
    cups
    long-grain white rice
    salt

    ounces
    pigeon peas, rinsed and drained
    Directions
    In skillet, cook bacon, remove and cut into small pieces.
    In same skillet, cook onion and pepper over medium heat until light brown, about 10 minutes. Add garlic and adobo and cook for 1 minute. Add ham and cook 1 minute. Add tomato paste and cook 2 minutes. Add chicken broth and bring to boil.
    Stir in rice and salt to taste. Reduce to a simmer and cook until most liquid is absorbed. Fold in pigeon peas, cover, and cook over low heat until rice is cooked through and liquid is absorbed, about 15 minutes.
