Bring water to boil.
Add pinch of salt and steel cut oats. Lower heat, cover and let simmer 10 to 20 minutes.
For almonds and pumpkin seeds: Heat small skillet over low to medium heat, toss in almond and pumpkin seeds, stir until toasted and fragrant. Set aside.
For apples: Warm skillet over medium heat and melt butter (use same skillet in which you toasted nuts). Add apples, cinnamon, and brown sugar. Let cook approximately 10 minutes or until apples are soft and brown sugar is completely dissolved.
Serve steel cut oats in bowl and top with apples, almonds, and pumpkin seeds.
