    Ancho Potato Cakes

    Transform your left over boiled or mashed potatoes and make Ancho Potato Cakes. With a little ancho chile, paprika, and black pepper, these puffs will revolutionize your dinner table.


    Ingredients
    1/2
    cup
    vegetable oil
    2
    cups
    potatoes, boiled and mashed
    1/2
    tablespoon
    ground ancho chile powder
    1/2
    teaspoon
    paprika
    1/2
    cup
    pepper jack cheese
    1
    egg, beaten
    1/2
    cup
    flour
    1/4
    cup
    breadcrumbs

    salt and pepper to taste
    Directions
    Add 1/2 cup vegetable oil to pan on medium-high heat.
    Combine potatoes ancho, paprika, cheese, salt and pepper. Then fold in egg.
    Working with 2 tablespoons of the potato mixture at one time, shape into small bows. Combine bread crumbs and flour. Roll balls in flour mixture.
    Slightly flatten balls to create a thick mini cake.
    Pan fry cakes until golden brown on both sides.
    Transfer to paper towels to drain excess oil. Allow to cool slightly before serving.
