    Ancho Lime Yucca Chips

    Add a new flavor to your dinner tonight with this easy recipe for Ancho Lime Yucca Chips. Thinly sliced yucca and sweet potatoes are roasted until crisp and then tossed with tangy and spicy lime, ancho, and cayenne mixture.


    Ingredients

    cassava, peeled

    small sweet potatoes, peeled

    avocado oil

    kosher salt

    freshly ground black pepper

    Zest and juice of 1/2 lime
    1 1/2
    teaspoons
    ancho chile powder
    1 1/2
    teaspoons
    chopped parsley
    1/4
    teaspoon
    cayenne pepper
    Directions
    Preheat the oven to 400 F. Line a baking sheet with a silicone mat or parchment paper.
    Using a mandolin slice cassava and sweet potatoes 1/8 inch thick. Place in a bowl with avocado oil, salt, and pepper. Toss to coat.
    Spread slices in a single layer on the prepared baking sheet. Bake chips for 7 minutes on each side or until crisp.
    While the chips bake mix the lime zest, juice, ancho, parsley, and cayenne.
    Toss hot chips with lime mixture and serve hot.
