Almond Butter and Blueberry Madness Chia Pudding

Forget your normal PB and J. This Almond Butter and Blueberry Madness Chia Pudding is a healthier and heartier version than the classic. Crunchy almond butter is topped with coconut sugar sweetened blueberry chia pudding and is sprinkled with chopped raw almonds making a satisfying mid-day pick-me-up!


Ingredients

crunchy almond butter

cashew milk, unsweetened
1/2
cup
frozen blueberries
1/2
tablespoon
coconut sugar

tablespoons
chia seeds
2
tablespoons
raw almonds, roughly chopped
Directions
Add almond butter to bottom of cup, spread out into an even layer and set aside.
In a blender combine cashew milk, blueberries and coconut sugar. Blend and adjust sweetness to taste. Add chia seeds and pulse to combine.
Pour blueberry mixture over almond butter and refrigerate overnight. Before serving top with raw almonds.
