Almojabanas

Almojabanas

Almojabanas are small bread rolls made with cheese and are found throughout Latin America, especially Colombia, Puerto Rico, and Panama. Although some almojabanas can be fried, these are of the baked variety, using a Colombian recipe. And note: since these are made with white corn flour (we like this one) these are gluten free!


Ingredients

Queso fresco

butter

precooked white corn flour

baking powder

corn starch

milk
Directions
Heat your oven to 400°.
Place the queso fresco and butter in the bowl of a food processor. Pulse until the cheese and butter are well crumbled.
Add the corn flour, egg, baking powder, and corn starch, and pulse until well combined. While the food processor is running, add the milk one tablespoon at a time through the feed hole until the dough begins to gather into a ball.
Remove the dough from the food processor and divide into 10 equal pieces. Roll the pieces into a ball and place on a greased baking sheet.
Bake in the oven for 20 minutes or until they are slightly golden brown.
