    Aguachiles with White Fish and Plantains

    This Mexican ceviche takes it's cue from a classical Peruvian preparation and blends the irresistable combination of tangy lime soaked fish with sweet plantains, juicy tomatoes, and bright cilantro.


    Ingredients

    pound
    white fish, such as dorado
    1
    cup
    fresh lime juice
    2
    jalapeno, serrano or other spicy chiles, sliced finely (seeds removed, optional)

    tablespoons
    finely chopped red onion
    1
    tablespoon
    fine sea salt
    1
    tablespoon
    Olive Oil
    1
    very ripe plantain, peeled and diced
    1/2
    cup
    diced tomatoes
    1/4
    cup
    Chopped Cilantro
    Directions
    Wash and dry the fish. Cut into 1/2-inch cubes. Combine with next five ingredients and toss well. Cover and refrigerate for three hours.
    Add plantains, tomatoes and cilantro, again toss well and refrigerate for another hour.
    To serve, divide among four bowls. This is excellent with tortilla chips, but saltines or warmed tortillas are great options too.
