Step 1: Rinse
Artichokes have a lot of leaves and layers so make sure to thoroughly rinse your artichokes in cold water before cooking. It doesn’t hurt to give them a once over with a kitchen brush to get any stubborn grit off the leaves, paying careful attention to the layers in between the leaves.
Step 2: Trim
Cut off the top-most part of the artichoke (about a 1/4), trim the stem (but do not remove completely), and snip off any remaining spiky leaf tips.
Step 3: Cook
An easy way to cook artichokes is simple steaming. Place your artichokes upside-down (stem side-up) in a steamer pot. Cook for 40 minutes or until tender. The leaves should come off easily when done. (Test by giving one a slight tug, you want it to slide out easily.)
Step 4: Remove “fuzzy choke” and enjoy!
Once cooked, remove the sharp leaves inside the center and use a spoon to scrape out the “fuzzy choke”. From here, you can stuff as you please or simply cut lengthwise into quarters and serve with lemon, olive oil, and garlic! (Salt and pepper to taste, of course).
