Rich and full-bodied with ripe fruit flavors of cherries, blackberries, or plums. You may taste earthiness, leather, smoke, tobacco, cocoa, or vanilla.
Stewed, roasted, or grilled red meats like beef, lamb, or game. Often goes well with fatty fish, and chocolate desserts. Try pairing it with: Asado Argentino con Chimichurri (Grilled Steak with Chimichurri Sauce), Picadillo-Stuffed Plantains (Plátano Relleno con Carne Molida), Mushroom Crepes with Poblano Chile Sauce, Red Bean, Chorizo, and Short Rib Stew, or Brazilian Feijoada.
