It’s amazing how one little legume, the lentil, can be so full of nutrients and health benefits while also being so low in calories. They’re easy to cook and season. I think I may have found the perfect legume; they’re definitely my favorite.  

There are a lot of types of lentils: green, black, red, small, and larger varieties. But they all have one thing in common: they’re healthy. Lentils are full of soluble fiber and help lower cholesterol levels. They also help strengthen the heart and are beneficial to the digestive system. And if that wasn’t enough, they are full of protein, they help keep your energy up, and they assist with weight loss. I mean, who doesn’t want all of these benefits?

Lentils are great for meat eaters and vegetarians alike. I keep a vegan household, which means that my family doesn’t eat any type of animal product or byproduct. Lentils come in handy when I’m trying to cook for a hungry family but require options outside of traditional protein sources. They give us vegans tons of protein and they’re easy on the wallet. 

When the temperature dips and you’re looking for something cozy and comforting, whip up a big pot of this red lentil soup. The Indian influences from the whole coriander and cumin will make your tastebuds explode (and fill your home with a lovely aroma) and the coconut milk will give you a subtly sweet and tropical hit.
