I have three kids, all of them play soccer and all of them have millions of activities during school and after school. So my crock pot recipes and the super easy ones, like this one, are my best friends.

I love this recipe because it can be made in no time with store bought ingredients or it can be made with homemade ingredients. For example, it calls for tomato puree. When I have time, I like to blend my own fresh farmers market bought tomatoes, especially in the summer when they are at their best, for use in soups like this. But I also buy a good quality canned version that suits me just fine.

This soup also goes well with any kind of beans, use the three I’ve listed or use any combo of three (or more) that you life. This is perfect because on my crazy days, I just go in the pantry and grab which ever canned bean I have and throw it in the pot.

I guess that the clue here is to buy the best ingredients that you can. I look for brands that list the fewest ingredients, buy organic when possible, even shop for cans that have no BPA lining. A little time in the grocery store will make weeknight cooking fast!

As much as I love cooking and entertaining, I can only devote hours to my kitchen on the weekends. But having no cooking time has not stopped me from eating delicious and healthy.This three bean chili is delicious enough to entertain a whole crowd of people on any busy school night.
