  • 1 cup sliced onion
  • 1/2 red pepper, thinly sliced
  • 4 whole wheat tortillas, warmed
  • 1/2 cup cooked brown rice
  • 1/2 cup cooked black beans
  • 1/2 cup shredded zucchini
  • 1/4 cup shredded habanero jack cheese
