Making a recipe from scratch is more than worthwhile, but sometimes, in the interest of time, we just need to opt for a store-bought shortcut. Take puff pastry for instance, with its layers upon layers of sweet butter sandwiched between thin sheets of dough that are rolled and turned to create a flaky texture we love. Sounds easy, right? Well, not exactly. Technical details usually confound home cooks, and mistakes like using too much butter, too much flour, sugar or salt, errors in rising, and lack of uniformity in layers throughout the dough result in baking headaches. For these reasons, puff pastry is a often considered a recipe best overlooked for a store-bought version, especially since high-quality puff pastry is available in most grocery stores.
